How can coconut water stop inside?

The water comes from the soil where the coconut is planted and the rain. The plant absorbs the liquid and store everything within its fruits. She does this to create a nutrient reserve for the seed, which is stored inside the coconut. As the fruit matures, part of the liquid becomes solid and form the thick and juicy pulp of the ripe coconut.
